Vegetable biryani is a traditional mughlai rice recipe. It is healthy, delicious and nutritious rice recipe with the goodness of all the all vegetable. It is rice and spicy vegetable layered with rice recipe. It is a dish of steamed rice stir-fried. Cooked rice stir-fried with cinnamon, elachi, cloves, ginger garlic paste, green chili,  chili powder, black pepper powder, turmeric and bay leaf, fry for 2-3 min, then add potato, beans, pea and carrot, flavored with saffron and garnish with coriander leaves and fried onion. You can serve with curd, pickle and salad. You can also add such other vegetables broccoli, bean celery, corn, mushrooms and peppers.

  • Basmati Rice – 2 cup
  • Chopped Onion – 2 nos.
  • Chopped Beans – 1/4 cup
  • Chopped Carrot – 1/4 cup
  • Chopped Potato – 1/4 cup
  • Pea – 1/4 cup
  • Curd (Dahi) – 1/2 cup
  • Chopped Green chili – 1-2 nos.
  • Coriander leaves (chopped) – 2 tbsp
  • Garlic-Ginger Paste – 2 tbsp
  • Red Chilli powder – 3/4 tbsp
  • Black pepper powder – 3/4 tbsp
  • Paneer (cut into cubes) – 1/4 cup
  • Saffron (make a solution with 1 tbsp of milk)- a pinch
  • Salt as per taste
  • Oil for frying –
  • Cinnamon – 1-2 nos.
  • Green Cardamom or Elachi – 2-3 nos.
  • Cloves – 2-3 nos.
  • Bay Leaf (tej patta) – 2 nos.
  • Water as needed –


  • Wash rice and in a large pan, add 4-5 cups of water, 1/2 tbsp oil and 1/2 tbsp salt and boil it.
  • When it’s boiling, add rice.
  • Cook it till rice gets soft, drain the extra water and keep aside.
  • Heat the oil in a pan on medium flame, add onion, paneer and kaju.
  • Fry it till they turns little golden brown and keep aside.
  • Heat the oil in a pan on medium flame, add cinnamon, elachi, cloves and bay leaf.
  • Fry it for 3-4 min.
  • Add ginger garlic paste, beans, carrot, potato, pea, green chili, red chili powder, black pepper powder, turmeric powder and salt, mix well.
  • Add curd and mix well.
  • Fry it for 5-6 minutes or until the masala coats the vegetables and keep aside.
  • In a big saucepan, spread a layer of rice, sprinkle the saffron milk 1 tbsp and spread a layer with vegetables over it.
  • Cover and simmer for 5-10 minutes on low flame.
  • Garnish with coriander leaves and fried onions.
  • Serve hot vegetable biryani with curd.
