Royal Kabuli Pulao RecipeRoyal kabuli pulao recipe is a traditionally Indian rice recipe. Kabuli pulao is a different in taste, flavorful and delicious rice recipe. Basmati rice cook with white cauliflower, pea, potato, paneer, soya chunks, bay leaves, cinnamon, cumin seed, garlic, ginger, curd, onions and spices. You can enjoy with curd or raita or pickle or chutney.

Ingredients:

  • Basmati Rice – 2 cup
  • Chopped Cauliflower – 1/2 cup
  • Pea – 1/2 cup
  • Potato – 1 large
  • Soya Chunks (wash and soak in warm water for 15 min) – 1/2 cup
  • Paneer (cut in a long pieces ) – 1/2 cup
  • Bay Leaf (tej patta) – 1-2 os.
  • Cumin Seed – 1 tbsp
  • Cinnaman(Dal chini) – 1-2 nos.
  • Onion Sliced – 2 medium
  • Finely Chopped Garlic – 2 cloves
  • Finely Chopped Ginger – 2 inch
  • Red Chili Powder – 1 tbsp
  • Coriander Powder – 1/2 tbsp
  • Turmeric Powder – 1/2 tbsp
  • Garam Masala – 1 tbsp
  • Curd (Dahi) – 1/2 cup
  • Salt as per taste –
  • Desi Ghee ( clarified butter) – 5-6 tbsp

Instructions:

  • Heat the ghee in a pan on medium flame, add almond, pistachios and raisins.
  • Fry it till they turns little golden brown and keep aside.
  • Wash rice and in a large pan, add 4-5 cups of water, 1/2 tbsp oil and 1/2 tbsp salt and boil it.
  • When it’s boiling, add rice.
  • Cook it till rice gets soft and drain extra water, keep aside.
  • Heat the ghee in a pan on medium flame, add cauliflower, pea, potato, soya chunks (squeeze all the water from soya) and paneer.
  • Fry it till they turns little golden brown and keep aside.
  • Heat the ghee in a pan on medium flame, add bay leaves, cinnamon, cumin seed, garlic and ginger.
  • Fry it for 3-4 min.
  • Add onions and mix well.
  • Fry it till onion turns little golden brown.
  • Add red chili powder, turmeric powder, coriander powder and garam masala, mix well..
  • Add yogurt and cook it for 4-5 min.
  • Add fried vegetable, little water, salt and mix well.
  • Cook for 3-4 min, keep aside.
  • In a big saucepan, spread a layer of rice first, then add vegetable curry and another layer of rice.
  • Cover and simmer for 5-10 minutes on low flame.
  • Garnish with fried almond, pistachios and raisins.
  • Serve hot royal kabuli pulao recipe with curd or pickle.
