Quick Vegetable Pulao Recipe (Copy)Quick Vegetable Pulao Recipe is extremely quick but yet very tasty pulao recipe. In this recipe, rice are cooked with vegetables and Indian spices. You can also add other vegetable such as corn, mushroom, capsicum, tomato etc. It is very easy, delicious and quick recipe so bachelor’s can also make this delicious pulao recipe.

Ingredients:

  • Rice – 2 cup
  • Chopped Green Chili – 1-2 nos.
  • Chopped Onion – 1 big
  • Chopped Potato – 1 medium
  • Chopped Cauliflower – 1/4 cup
  • Chopped French Beans – 1/4 cup
  • Chopped Carrot – 1/4 cup
  • Pea – 1/4 cup
  • Cloves – 3-4 nos.
  • Bay Leaf – 1-2 nos.
  • Green Cardamoms – 2 nos.
  • Salt as per taste –
  • Butter / Oil for frying –
  • Red Chili Powder – 1/2 tbsp
  • Turmeric Powder – 1/4 tbsp
  • Lemon Juice – 1/2 tbsp
  • Water – 3-4 cups
  • Finely Chopped Coriander Leaves – 1-2 tbsp

Instructions:

  • Wash the rice and soak them for about an hour.
  • Drain the extra water and keep aside.
  • Heat the oil in a pan on medium flame, add cloves, bay leaves and cardamoms.
  • Fry for 2-3 min.
  • Add green chili and onion, fry it till onion turns little golden brown.
  • Then add potato, cauliflower, french beans, carrot and pea, fry it for 4-5 min.
  • Now add salt, red chili powder and turmeric powder, mix well.
  • Add some water and cook until the veggies and potatoes tender.
  • Add the soaked rice and mix well.
  • Add 2 cups of water, cover and cook for first 4-5 minutes.
  • After that uncover and keep stirring.
  • When the rice starts boiling, then reduce the flame.
  • Cover and cook it till the rice are done.
  • Transfer into serving bowl.
  • Garnish with coriander leaves.
  • Serve hot quick vegetable pulao with plain yogurt or tomato chutney or pickle.
