Gatte Ka Pulao Recipe Gatte ka pulao recipe is different in other Rice recipe. It is very delicious recipe definitely fulfills your taste buds. Cooked the rice with fry cumin seeds, green cardamom, cinnaman, black cardamom, cloves, bay leaves, turmeric powder, red chili powder, garam masala, coriander powder, ginger paste and fried gatta. You can serve with with chutney and curd.

Ingredients:

  • Basmati Rice – 2 cup
  • Desi Ghee ( clarified butter) – 3-4 tbsp
  • Cumin Seed – 1 tbsp
  • Green Cardamom – 2-3 nos.
  • Black Cardamom – 2-3 nos.
  • Cinnaman(Dal chini) – 1-2 nos.
  • Bay Leaf (tej patta) – 1-2 nos.
  • Cloves – 1-2 nos.
  • Ginger Paste – 1tbsp
  • Garam Masala – 1 tbsp
  • Red Chili Powder – 1/2 tbsp
  • Coriander Powder – 1 tbsp
  • Turmeric Powder – 1/4 tbsp
  • Salt as taste –

For Gatta:—– –

  • Besan Flour – 1 cup
  • Ajwain – 1 tbsp
  • Turmeric Powder – 1/4 tbsp
  • Red Chili Powder – 1/2 tbsp
  • Salt as per taste –
  • Baking Soda – a pinch
  • Lemon Juice – 2 tbsp
  • Oil for frying –

Instructions:

  • For making gatta:— In a bowl, add besan, ajwain, baking soda, turmeric powder, red chili powder, salt and lemon juice, mix well.
  • Add little water and make dough as we are preparing for paratha/roti.
  • Divide into six equal parts and roll into cylindrical shape and keep aside.
  • Heat 2 cups of water in a pan on medium flame, when water starts boiling, add above made dough and cook for 10-15 min.
  • Drain excess water and allow to cool a bit then cut in to 1 inch pieces.
  • Heat the oil in a pan on medium flame, add pieces and fry it till turns little golden brown, keep aside.
  • Wash rice and in a large pan, add 4-5 cups of water, 1/2 tbsp oil and 1/2 tbsp salt and boil it.
  • When it’s boiling, add rice. when cooked, keep aside.
  • Heat the ghee in a pan on medium flame, add cumin seeds, green cardamom, cinnaman, black cardamom, cloves and bay leaves, fry for a minute.
  • Add turmeric powder, red chili powder, garam masala, coriander powder and ginger paste, stir fry for 2-3 minutes.
  • Add cooked rice, salt and fried gatta, fry it properly.
  • Serve hot gatta pulao with curd and chutney.
