Carrot and spinach rice recipe is healthy, delicious and nutritious rice recipe with the goodness of all the spinach and carrot. It is Spinach and carrot layered with rice recipe. This recipe is rich in vitamin A, calcium and iron. It is a dish of steamed rice stir-fried in a pan and mixed with other ingredients, such as vegetables and spices. Cooked rice stir-fried with spicy spinach mixtute, spicy carrot mixture and Indian spices. Garnish with coriander leaves. You can serve with curd, pickle and salad.

  • Basmati Rice (wash and soaked for 10 min) – 1 cup
  • Cumin Seed – 1/2 tbsp

For Layer :—- –

  • Chopped Spinach – 2 cup
  • Pea (wash and boil) – 1/2 cup
  • Chopped Green Chili – 1 tbsp
  • Chopped Onion – 11/2 cup
  • Grated Carrot – 1 cup
  • Coriander Powder – 1 tbsp
  • Cumin Seed – 1 tbsp
  • Salt as per taste –
  • Oil / Ghee for frying – 3 tbsp
  • Butter Cubes – 3-4 nos.
  • Finely Chopped Coriander Leaves – 1 tbsp
  • Onion and Lemon (cut into slices) For garnish – few slices


  • For making rice layer:—–
  • Wash rice and in a large pan, add 4-5 cup of water, 1/2 tbsp oil and 1/2 tbsp salt and boil it.
  • When it starts boiling, add rice.
  • Cooke it till rice gets soft and drain the extra water and keep aside.
  • Heat the ghee in pan on medium flame, add cumin seed and fry for 2-3 min.
  • Add the cooked rice and little salt, fry it for 4-5 min and keep aside.
  • For making spinach layer:—-
  • Heat the oil in a pan on medium flame, add little cumin seed, green chili and onion.
  • Fry it till onion turns little golden brown.
  • Add spinach, pea and little salt.
  • Cook it till the spinach gets soft and keep aside.
  • For making carrot layer:—
  • Heat the oil in a pan on medium flame, add little cumin seed.
  • Fry for 2-3 min.
  • Add the grated carrots and little salt, mix well.
  • Cover and cook it till carrot gets soft, keep aside.
  • Heat the oil in pan on low flame, add the first layer of fried rice, now second layer add the spinach and peas mixture and after that add rice layer and on top add carrot layer.
  • Spread on top butter cubes and coriander leaves.
  • Cover and cook for 3-4 min.
  • Garnish with onion and lemon slices.
  • Serve hot rice with raita.
