PUMPKIN KOFTA CURRY RECIPE

Zucchini Kofta Curry / Pumpkin Kofta Curry Recipe / Kaddu Kofta Curry

Pumpkin Kofta Curry Recipe is a delicious and tasty dish with less fat mixed with kaddu-pumpkin and besan flour made in spiced yoghurt-curd gravy curry. It is perfect side dish with roti or rice.

Ingredients:

For Curry:—– –

  • Tomato – 2 medium
  • Grated Coconut – 1/4 cup
  • Poppy Seed – 1 tbsp
  • Kaju Pieces – 11-12 nos.
  • Grated Ginger – 1 inch
  • Garlic Cloves – 1/2 tbsp
  • Chopped Onion – 1 big
  • Coriander Powder – 1 tbsp
  • Garam Masala – 1 tbsp
  • Salt as per taste –
  • Chopped Green Chili – 1 tbsp
  • Cumin Powder – 1 tbsp
  • Red Chili Powder – 1/2 tbsp
  • Sugar – 1/2 tbsp
  • Turmeric Powder – 1/2 tbsp
  • Finely Chopped Coriander Leaves – 2-3 tbsp
  • Curd – 1/4 cup

For Kofta:— –

  • Grated Pumpkin – 2 cup
  • Besan FLour – 2-3 tbsp
  • Chopped Green Chili – 1 tbsp
  • Salt as per taste –
  • Cumin Seed Powder – 1 tbsp
  • Grated Ginger – 1/2 tbsp
  • Red Chili Powder – 1/4 tbsp

Instructions:

  • For making kofta:— In a bowl, add pumpkin, besan, green chili, salt, cumin powder, ginger and red chili powder, mix well.
  • Make small balls and press it tightly and then shape into ball.
  • Heat the oil in a pan for deep frying on medium heat, add pumpkin ball and cook till the ball turns golden brown and keep aside.
  • For making curry:— In a grinder, add coconut, poppy seed, kaju, ginger, garlic, green chili and onion, make a fine paste and keep aside.
  • Heat the oil in a pan on medium flame, add ground paste and fry it till oil starts floating on the surface.
  • Add coriander powder, turmeric powder and red chili powder, mix well.
  • Add tomato and cumin powder, mix well, cover and cook for 4-5 min.
  • Add curd and sugar, mix well and cook for 5-6 min.
  • Add garam masala, salt and water, boil it.
  • Add fried kofta and cook it till curry becomes thick.
  • Garnish with coriander leaves.
  • Serve hot pumpkin kofta curry with roti or paratha or rice.
