Gujarati undhiyu recipe  is a Gujarati mixed vegetable dish that is a regional specialty of Gujarat. The vegetable (beans, brinjal, potato, raw banana and yam) are cooked together with lemon juice and spice powders. You can serve with rice.

Ingredients:

  • Chopped Beans (cut into 1/4 inch long halves) – 1/2 cup
  • Small Brinjal (cut into sliced quartered like a flower (leave the base intact)) – 4-5 nos.
  • Small Potato (Peel and cut into sliced quartered like a flower) – 7-8 nos.
  • Raw Banana (peel and cut into thick slices) – 1 nos.
  • Sweet Potato (peel and cut into 1/2-1/3 inch long pieces) – 1 nos.
  • Yam (peel and cut into 1/2-1/3 inch long pieces) – 1/4 cup
  • Oil for frying – 5-6 tbsp
  • A pinch Hing –
  • Ajwain – 1/2 tbsp
  • Salt as per taste –
  • Turmeric Powder – 1/2 tbsp
  • Red Chili Powder – 1/4 tbsp
  • Coriander Powder – 1 tbsp
  • Dry Mango Powder – 1/2 tbsp
  • Garam Masala – 1/2 tbsp
  • Powdered Sugar – 1/2 tbsp
  • Roasted Sesame Seed – 2 tbsp
  • Peanut – 2 tbsp
  • Kaju – 2 tbsp
  • Grated Ginger – 2 inch
  • Chopped Green Chili – 1 tbsp
  • Finely Chopped Coriander Leaves – 2-3 tbsp
  • Lemon Juice – 2 tbsp

For Muthiya:—- –

  • Besan Flour – 1/4 cup
  • Wheat Flour – 1/4 cup
  • Salt as per taste –
  • Chopped Coriander Leaves – 2-3 tbsp
  • Red Chili Powder – 1/4 tbsp
  • Oil for dough – 2-3 tbsp
  • Turmeric Powder – 1/4 tbsp
  • Finely Chopped Methi Leaves – 1/2 cup
  • Oil for frying –

Instructions:

  • For making muthiya:—
  • In a bowl, add wheat flour, besan flour, red chili powder, oil, turmeric powder, methi leaves and salt, mix well so oil incorporates well with flour.
  • Add enough  water to make a dough of rolling consistency, as we are preparing for paratha/roti and keep aside covered for 15 minutes.
  • Take small pieces from the dough made for muthiya and roll them into 10-11 rolls of 2 inches in length.
  • Heat the oil in a pan on low flame, place muthiya and fry it till turn brown and crispy, keep aside.
  • Heat the oil in a pan on medium flame, add yam and sweet potato, fry it till turn little golden brown.
  • In a grinder, add sesame seeds, peanuts and cashew nuts, make a coarse powder and transfer into bowl.
  • Add ginger, green chili and coriander leaves, mix well.
  • Add salt, turmeric powder, red chili powder, coriander leaves, dry mango powder, garam masala, lemon juice and mix well, keep aside.
  • Stuff potato and brinjal well with the spices mixture.
  • Add the remaining spices with the chopped mix vegetable banana, yam, sweet potatoes and beans, mix well.
  • Heat the oil in a pan on medium flame, add hing, ajwain and little turmeric powder, fry for 3-4 min.
  • Add spices mixed vegetable and fry for 5-6 min, keep aside.
  • Cook vegetables and stuffed potato-brinjal in pressure cooker with 1 cup of water.
  • Cook it till vegetable get cooked.
  • Let the pressure escape from the cooker and open the lid and add the fried yam, sweet potatoes and muthiya.
  • Close the lid and cook vegetables for another 3-4 min.
  • Garnish with coriander leaves.
  • Serve hot undhiyu with hot poori or paratha or chapati.
