Aloo Capsicum Dry / Aloo Shimla Mirch Ki Sabzi / Potato Capsicum Fry

Aloo Shimla Mirch Ki Sabzi  is a easy to make, delicious side dish, dry vegetarian curry and popular Punjabi Dish. Aloo Capsicum Curry makes North Indian style potato-aloo and capsicum-shimla mirch with spices. You can serve with rice or rotis or paratha.

Ingredients:

  • Chopped Capsicum – 2 nos. medium
  • Potato (cut into cubes) – 2 medium
  • Chopped Onion – 2 Large
  • Chopped Garlic – 1 tbsp
  • Cumin Seed – 1 tbsp
  • Chopped Green Chili – 1 tbsp
  • Turmeric Powder – 1/2 tbsp
  • Red Chili Powder – 1/2 tbsp
  • Coriander Powder – 1 tbsp
  • Garam Masala – 1 tbsp
  • Salt as per taste –
  • Oil for frying –
  • Finely Chopped Coriander Leaves – 2-3 tbsp

Instructions:

  • Heat the oil in a pan on medium flame, add cumin seed, garlic, green chili and onion.
  • Fry it till turns light golden brown.
  • Add turmeric powder and salt, mix well.
  • Add capsicum and potato, fry for 4-6 min.
  • Cook it till vegetable gets soft.
  • Add red chili powder, garam masala and coriander powder, mix well.
  • Fry for 5-6 min.
  • Garnish with coriander leaves.
  • Serve hot aloo capsicum with roti or paratha orrice.
