Ranga Aloor Pithe / Sweet Potato Dumplings

Ranga Aloor Pithe is traditional Bengali Sweet Recipe. Make a soft dough by mixing sweet potato, all purpose flour-maida, grated coconut and cardamom powder. Make round balls from that sweet potato dough and deep fry in ghee. Soak these balls in hot cardamom powder and saffron flavored sugar syrup.

Ingredients:

For Balls:—-

  • Sweet Potato – 2-3 nos.
  • All Purpose Flour – 1-2 tbsp
  • Grated Coconut – 2 cup
  • Ground Cardamoms – 3-4 tbsp
  • Oil for frying –

For Sugar Syrup:— –

  • Sugar – 2 cup
  • Water – 1 cup
  • Ground Cardamom pods – 1-2 nos.
  • Few Saffron strands(soaked in 1 tbl spn warm milk) –

Instructions:

  • For Making Balls:—-
  • Boil the sweet potato till it is soft and mushy.
  • Peel the potato once its cool and then mash it up.
  • In a bowl, add mashed sweet potato, coconut and maida flour, make a medium-hard dough and keep aside.
  • Divide the dough into 18-20 portions and make smooth round balls by gently rolling each portion between your palms and place the balls on a plate.
  • Heat the oil on high flame in a pan, slide the balls one by one.
  • They will sink to the bottom of the pan and do not try to move them and balls must be fried very slowly under medium temperature for complete cooking.
  • For Making Sugar Syrup:—
  • The syrup should be made earlier and kept warm.
  • In a big pan, add sugar, water, 4-5 slightly crushed cardamom pods and a few strands of kesar.
  • Mix it with a spoon and heat the pot for 5-10 minutes until sugar get dissolved.
  • Do not overheat, that will caramelize the sugar.
  • Transfer hot syrup into a serving dish and keep warm on stove, add the fried potatoes balls directly into the warm syrup.
  • Serve hot or cold Ranga Aloor Pithe.
