Chawal Ka Namkeen Pitha Recipe / Chawal Ka Pitha

Chawal ka namkeen pitha recipe is a common breakfast or snack especially the eastern states of Assam, West Bengal, Bihar, Jharkhand and the northeastern region. Pithas are made from a batter of rice flour or wheat flour, which is shaped as potli and optionally filled with sweet ( sugar, jaggery, palm syrup and can be filled with grated coconut, cashews, pistachios or fruits, flavored with cardamom or camphor) or vegetable ingredients. For stuffed vegetable pithas, ingredients such as pea, carrot, cauliflower, cabbage, radish or potato are fried and then mashed and allow to cool, formed into small balls to stuff into the pithas. Pithas can be steamed and serve with green chutney.

Ingredients:

  • Rice Flour – 1 cup
  • Potato (cut into small cubes) – 1 medium
  • Carrot (cut into small cubes) – 1 medium
  • Green Pea – 1/2 cup
  • Oil – 3-4 tbsp
  • Cumin Seed – 1 tbsp
  • A pinch Asafoetida –
  • Turmeric Powder – 1/4 tbsp
  • Coriander Powder – 1/2 tbsp
  • Finely Chopped Green Chili – 2-3 nos.
  • Grated Ginger – 1/2 tbsp
  • Dry Mango Powder – 1/2 tbsp
  • Finely Chopped Coriander Leaves – 2-3 tbsp
  • Salt as per taste –
  • Garam Masala – 1/2 tbsp

Instructions:

  • Heat the oil in a pan on medium flame, add hing and cumin seed, fry for 2-3 min.
  • Add turmeric powder, green chili, ginger and fry for 3-4 min.
  • Add potato, carrot, peas, salt and dry mango powder.
  • While stirring all ingredients, fry the vegetables for 4-5 min.
  • Add 1/2 cup of water, cover and cook for 5-6 min.
  • Cook it till they gets soft.
  • Add garam masala and green coriander, mix well.
  • Fry for 4-5 min and keep aside, allow to cool.
  • Heat the 1 cup of water in a pan, add salt and 2 tbsp of oil, mix well.
  • Add rice flour and mix well, turn off the gas and cover the mixture and keep aside for 10-15 min.
  • In a big bowl, take out the flour mixture and make a dough of rolling consistency, as we are preparing for paratha/roti and keep aside covered for 30 min allowing it to ferment.
  • Apply some oil to hand and knead the dough some more, making it more soft.
  • In a steamer, add about an inch of water and cook till it comes to boil.
  • Spread some oil on steamer tray with holes in it and grease it well.
  • Spread some oil on your palms and make Pitha.
  • Take small portion from the dough and make a hole in each round portion and pour the 1 tbsp of stuffing mix and seal it.
  • While wrapping up the Pitha, make sure that it does not tear. Round up the Pitha and keep on a plate.
  • After the water filled in the steamer comes to boil and pitha should be placed in it, apart from each other.
  • Cover and allow to cook for 15-16 min and when cooked, the colour of pitha is looks shiny.
  • Serve hot chawal ka namkeen pitha with green chutney.
