Brinjal Curry Recipe is very easy to prepare. This is very tasty and easy to make brinjal recipe. Baingan Ki Sabzi is a delicious Indian recipe served as a Side Dish. You serve with plain rice or paratha. In this recipe, brinjal cooked with spicy onion-tomato curry.

Ingredients:

  • Chopped Brinjal or Eggplant or Baingan – 2-3 cup
  • Cumin Seed or Jeera – 1 tbsp
  • Chopped Green Chili – 2-4 nos.
  • Chopped Garlic – 1/2 tbsp
  • Chopped Tomato – 1-2 nos.
  • Salt as per taste
  • Turmeric Powder – 1/4 tbsp
  • Methi Powder – 1/4 tbsp
  • Hing – a pinch
  • Red Chilli Powder – 1/4 tbsp
  • Coriander Powder – 1 tbsp
  • Garam Masala – 1 tbsp
  • Oil – 2-3 tbsp
  • Finely Chopped Coriander Leaves – 1 tbsp

Instructions:

  • Heat the oil in a pan on medium flame, add hing, jeera or cumin seed, garlic, methi powder and green chilli.
  • Fry it for 1-2 min.
  • Now add onion and fry it till onion turns little golden brown.
  • Add tomato and salt, mix well.
  • Cook it till tomatoes turns just mushy or for 4-5 min.
  •  Add 1 cup of water, turmeric powder, coriander powder, red chilli powder and garam masala, mix well.
  • Cook further for 5-6 min.
  • Add the cut brinjal and stir well.
  • Cover and cook for 5-7 minutes or it till brinjal gets soft.
  • Garnish with coriander leaves.
  • Serve hot brinjal curry with hot plain rice or paratha.
