CARROT CORN KOFTA CURRY

Carrot Corn Kofta Curry / Kofta Curry Recipe

Carrot Corn Kofta Curry is made by using carrot and corn ball dip in tomato, onion, ginger and spicy gravy. It is very delicious and tasty curry. It is perfect side dish with roti or rice.

Ingredients:

For Curry:—– –

  • Tomato – 2 medium
  • Grated Ginger – 1 inch
  • Garlic Cloves – 1/2 tbsp
  • Chopped Onion – 1 big
  • Coriander Powder – 1 tbsp
  • Garam Masala – 1 tbsp
  • Salt as per taste –
  • Chopped Green Chili – 1 tbsp
  • Cumin Powder – 1 tbsp
  • Red Chili Powder – 1/2 tbsp
  • Turmeric Powder – 1/2 tbsp
  • Finely Chopped Coriander Leaves – 2-3 tbsp
  • Curd – 1/4 cup

For Kofta:— –

  • Grated Carrot – 1 cup
  • Corn – 1 cup
  • Besan FLour – 2-3 tbsp
  • Chopped Green Chili – 1 tbsp
  • Salt as per taste –
  • Cumin Seed Powder – 1 tbsp
  • Grated Ginger – 1/2 tbsp
  • Red Chili Powder – 1/4 tbsp

Instructions:

  • For making kofta:—  Heat the 2 cup of water in a pan, add corn and salt, boil it till corn gets soft.
  • Remove the extra water and keep aside.
  • In a bowl, add carrot, boiled corn, besan, green chili, salt, cumin powder, ginger and red chili powder, mix well.
  • Make small balls and press it tightly and then shape into ball.
  • Heat the oil in a pan for deep frying on medium heat, add carrot-corn veg ball.
  • Fry it till the ball turns little golden brown and keep aside.
  • For making curry:— In a grinder, add ginger, garlic, green chili and onion, make a fine paste and keep aside.
  • Heat the oil in a pan on medium flame, add ground paste and fry it till oil separate on the top.
  • Add coriander powder, turmeric powder and red chili powder, mix well.
  • Add tomato and cumin powder, mix well, cover and cook for 4-5 min.
  • Add curd, mix well and cook for 5-6 min.
  • Add garam masala, salt and water, boil it.
  • Add fried carrot corn kofta and cook it till curry becomes thick.
  • Garnish with coriander leaves.
  • Serve hot carrot corn kofta curry with roti/paratha/rice.
