Arbi Tomato / Arbi-Colocasia Masala With Tomato / How To Make Arbi Tomato

Arbi Tomato is made of tomato puree with arbi and Indian spices, garnish with coriander leaves. Arbi tomato has different taste due to tomato puree. Enjoy this recipe with roti.

Ingredients:

  • Arbi (Boiled and chopped) – 10-11 nos.
  • Ajwain – 1/2 tbsp
  • Grated Ginger – 1 tbsp
  • Hing – a pinch
  • Finely /Chopped Green Chili – 1 tbsp
  • Finely Chopped Tomato – 1 cup
  • Turmeric Powder – 1/2 tbsp
  • Red Chili Powder – 1/4 tbsp
  • Coriander Powder – 1 tbsp
  • Dry Mango Powder – 1/2 tbsp
  • Finely Chopped Coriander Leaves – 1 tbsp
  • Salt as per taste –
  • Oil – 4 tbsp

Instructions:

  • In a grinder, add ginger, green chilis and garlic, make fine paste.
  • Heat the oil in a pan on medium flame, add ajwain and onions.
  • Fry it till it turns light golden brown.
  • Add the paste and cook for 2 min.
  • Cook it till mixture starts seprating from the oil.
  • Add tomato, cover and cook for 4-5 min.
  • Now add boiled arbi and mix well.
  • Fry for 8-10 min.
  • Add dry mango powder and mix well.
  • Garnish with coriander leaves.
  • Serve hot arbi masala with tomato with paratha or  khichdi or chapati.
